I'd love to have an etherpad where everyone in the course could write - and everyone can see who has written what and when.
Problem with external etherpads: they're anonymous
Problem with collaborative Office doc: you cannot see afterwards who has written in there

Thanks for your idea. This is not something that is currently on our roadmap. We'll leave the idea open for voting to understand the need.
In the mean time I suggest to check out the version history in MS Office documents, that shows you who edited it and where the changes were made.
